If serve from cups do not need to oil
Sprinkle gelatin over 1/4 cup water, stir gently and allow to bloom for 10 minutes
Place milk, honey and coconut milk in saucepan. Heat gently while stirring to mix in honey
When just starting to steam (do not boil) remove saucepan from heat and add bloomed gelatin and stir to dissolve; then stir in vanilla
Place serving cups or molds on small tray that will fir in fridge. Pour milk mix evenly into cups or molds, approx 1/2 cup per
Allow to cool then cover with plastic wrap.
Place in fridge overnight to set.
Can be made up to 3 days in advance, keep covered in fridge.
If top with fruit sauce, add after set, then cover again.
