Cod in a ginger-sesame oil sauce
Place scallions in a heat-proof bowl.
In a medium sauce pan, combine butter, sesame oil, ginger, garlic and 4 tblsp olive oil. Over medium heat, cook until butter begins to foam - about 4 minutes.
Turn off heat.
Pat fish fillets dry. Season with salt. Sprinkle one side with flour. Shake off excess.
Heat 2 tblsp olive oil in a large skillet. Add fish flour side down. Cook until golden, crisp and opaque - about 6 to 8 minutes. Turn fish and cook until done - about 2 more minutes.
While fish cooks, re-heat butter/oil mixture to hot. Pour sauce over scallions in the bowl. Stir to mix and wilt scallions.
Serve fish with scallion sesame sauce spooned on top.
Serve with jasmine rice or couscous.
