FOR COOKIES:
Whisk together or sift flour, baking powder, soda and salt; set aside.
Beat butter and sugar on medium-high speed until creamy.
Add eggs, one at a time, beating well after each addition.
Mix in extracts.
Add dry ingredients and beat just until combined.
Refrigerate for about 15-20 minutes.
Scoop dough with cookie scoop just slightly above the top; roll into balls and place on wax paper-lined cookie sheets. (The original recipe directed that the cookies be scooped with a 1/2 cup measuring cup and space cookies 4" apart, but I thought these were way too large for my baking purposes.)
Allow to chill for at least 2 hours or up to 1 day.
Bake at 350 degrees on parchment paper for 18-20 minutes (this was the time for the large cookies, and for the standard cookie scoop size, I baked 11-12minutes).
Bake just until edges are set and turning golden (they still were a little soft to the touch),
Allow to cool on cookie sheets for 5 minutes before removing to cooling racks.
FOR FROSTING:
Combine all frosting ingredients (I doubled the original recipe as it didn't look like it would be enough to frost 80+ cookies.
Frost cookies and serve.
