-in a medium heavy saucepan, combine sugar, corn syrup, and water over medium heat
-attach a candy thermometer to pan, increase to high heat and cook without sirring until mixture reaches 360 degrees
-remove from heat, add butter, vanilla, baking soda, and fried shallots
-spread onto a sheet pan. Let cool for 10 minutes and the. Break into pieces
