Wonderful cottage pie. Can make one or 3X, 6X or 9X the recipe and make extras that can be frozen
Original recipe yields:
one 8" x 8" baking dish, 4-6 servings. Or 2-3 qt baking dish
If you are making one or move of these ahead of time, line the baking dish with foil. Once frozen, you can remove it from the pan and wrap with more foil and plastic wrap and put it back in the freezer. This frees up your baking pan. The day before you want to cook it. Remove it from the freezer. Unwrap it and put it back in the original pan.
Cooking Day Instructions:
Brown the ground beef with onions. Add seasonings. Drain off excess grease from ground beef and spread evenly in casserole dish (foil lined if freezing). Layer the green beans (or corn) on top of the beef, followed by the tomato soup and picante sauce. Top with mashed potatoes. Sprinkle with cheese. Freeze, using foil and plastic wrap method described above. If cooking right away. Proceed with next instructions.
Serving Day Instructions:
Thaw completely. Bake at 350 degrees for 30-45 minutes or until heated through.
Serve with fresh break or muffins to make a complete meal.
