Makes 6 delicious personal casseroles.
Thaw the frozen vegetables.
Wash couscous in a colander, drain briefly and place in a bowl.
Boil vegetable broth, pour 1 tablespoon olive oil over the couscous and boil about 10 minutes.
Clean, wash and cut green onions diagonally into 2 cm long pieces.
Cut the turkey breast in about 1½ cm large pieces.
Preheat oven to 355°F. Brush the mold with oil.
Crumble the Feta cheese.
Heat the remaining olive oil in a pan.
Add turkey and spring onions and Sauté for about 3 minutes.
Season with the bokharat, ginger, salt and pepper.
Add couscous and vegetables to pan.
Whisk together milk, eggs, salt and pepper. Add half the Feta cheese while stirring.
Pour over the couscous mixture.
Add mixture to 6 individual ramekins or casserole pans.
Sprinkle with the remaining feta cheese.
Place in the oven & bake about 30 minutes.
Wash the parsley and basil and shake dry, cut the leaves small. Sprinkle the herbs over and serve the casserole.
