Modified to fit my taste - Eva O'Connell
1. Saute onion and bell pepper in butter until onion is translucent.
2. Add garlic, sauté for 1.5 - 2 mins, then set aside mixture to cool.
3. In mixing bowl, gently combine crab and the rest of the ingredients for the crab cakes. Add onion mixture when cool.
4. Form mixture into patties and dredge through stations - flour (with salt and pepper), egg (with splash of water and Dijon mustard) and Bread crumbs.
5. Heat Canola Oil to medium and fry crab cakes until crispy, turning once.
For the Remoulade:
1. Mix all ingredients together and adjust to taste.
2. Serve with crab cakes.
