Simple to make crab cakes with few ingredients
1. Heat a skillet with oil at medium high heat.
2. In a mixing bowl, combine crab meat, onion, mayonnaise and ground pepper. Gently toss the mixture until combined.
3. Add bread crumbs and scallions until combined.
4. Shape mixture into patties, 1/2" thick.
5. Lower head to medium. Pan fry crab cakes 3-4 minutes on each side.
6. Place crab cakes on towel paper to absorb excess grease.
7. Serve immediately.
Mayonnaise can be substituted with 2 eggs. I used mayonnaise so I don't have to worry about undercooking eggs.
