easy weeknight meal
Preheat oven to 350. prepare a 9x13 baking dish by spraying with cooking spray. Cook the rice as directed on package. During last 5 minutes of cooking, add the green pepper, carrots and onion. Add the cream of chicken soup and sour cream. stir to combine.
add the chicken breast and pepper and remove from heat. Pour contents into baking dish. sprinkle cheese on top. bake for 30 minutes.
