Method for making dough-
1 First heat the oil. Take the oil and maida, whole wheat flour, all the spices, salt and baking soda in a mixing bowl.
2. Mix everything well and rub the fat evenly in the flour with your fingertips. The whole mixture should resemble breadcrumbs. The more you do this, the more better texture the mathris will have.
3. Keep adding 1 or 2 tbsp of water each time while mixing the dough.
4. When the whole mixture can be easily gathered together into a ball, cover and keep aside for 30 mins.
Method for rolling crackers
1.Heat oil for frying in a pan.
2. Make around 15-16 small balls from the dough. Just roll them lightly in your palms giving them roughly round shape.
3. Brush the balls with oil and keep them covered so that they do not dry out.
4. Flatten each ball with a rolling pin to gain medium thickness. They may not turn exactly round in shape from the sides.
5. Prick each of the crackers with a fork.
6. You can use cookie cutter as well to give them shape.
Frying method -
1. The oil should be hot enough that if you fry the crackers they should gradually come to the surface.
If it comes to quickly, then the oil is very hot and the crackers will brown from out but remain uncooked from inside and will get soggy.
If it comes slowly, then the oil is cold. Then it would absorb a lot of oil.
Fry them in medium hot oil till crisp and golden.
2. Regulate the flame between low to medium if required.
3. Drain on kitchen paper towels and when cooled store them in an airtight box.
4.Prepare and fry them in batches.
Serve these crisp Crackers with tea or coffee as an evening snack.
It can be a savoured with pickle, sauces etc.
