Cranberry and Coconut Bar Cookie
Preheat the oven to 350 degrees.
Line a 9x13 pan with aluminum foil and spray with cooking spray. Set aside.
In a large microwave-safe bowl, add the butter. Heat on high to melt (about 1 minute).
Add the graham cracker crumbs and toss lightly with a fork to coat crumbs evenly with the butter.
Add the crumb mixture to the prepared pan, forming an even, smooth, flat crust layer by tapping crumbs into place with a spatula or fingertips. The amount of crust is skimpy and barely covers the pan, which is fine.
Evenly sprinkle with the white chocolate chips, chocolate chips, walnuts, cranberries and coconut (in that order).
Evenly drizzle the sweetened condensed milk over the top.
Bake for about 20 minutes, or until lightly golden brown around the edges and the center is mostly set.
Keep a close eye on the bars while they are baking. It can quickly go from raw-looking to having burnt coconut. It can take as long as 27 minutes to bake them, but check after 20 to make sure they are not about to burn.
