A jewel-like, fruity, sweet cranberry relish without all the tartness of cranberries... Great with everything, especially roasted meats and fowl. Can be heated and served over ice cream. Blend to use as a glaze for ham.
Combine all ingredients in a large pot.
Bring to a boil over high heat, stirring.
Lower heat, cover and simmer until cranberries start to pop, about 10 minutes.
Can be canned and given as gifts for the holidays.
Can be made a day ahead and refrigerated.
Can substitute fresh orange zest for dried orange peel if desired.
