Suggest a better descriptionIn large sauce pan, melt butter over medium high heat. Add onion, bell pepper, celery and sauté until tender (about 7-10 min). Add garlic and cook for 1 minute, stir in flour and cook additional 2 minutes stirring to prevent sticking. Reduce heat to medium, add crawfish and cook stirring frequently for 10 minutes until crawfish have curled up. Add Velveeta and cream, stir frequently to keep from burning until the cheese has melted. Taste the sauce and adjust seasoning to your liking while cooking for 5-7 minutes. Remove from heat and cover until needed.
Boil fettucine according to package directions, drain well. Dump fettucine into sauce pot and fold in with sauce until well mixed. Dump mixture into a 9" x 13" x 2" glass baking dish sprayed with non-stick spray. Spread mixture evenly into dish then sprinkle parmesan cheese evenly over the top. Bake in a 350degF oven for 20-30 min or until cheese has started to brown.
