Suggest a better descriptionpreheat oven to 425 degrees. In a large saucepan, heat 1 inch of water. Add spinach by the handful: allow to wilt before adding more. Drain and press out as much water as possible. Wipe out the pot.
Melt 2 Tablespoons of butter in the pot. Add the shallots or chopped red onion: cook over moderate heat until softened. Stir in the flour and cook for 1 minute. Add the milk (any type incl. half and half) and simmer until very thick whisking occasionally, 5 minutes. Stir in the cheese and spinach. Season with salt and pepper to taste. Spoon into baking dish-8inch square or larger for 6 servings.
In a small bowl melt the remaining 2 tablespoons butter. Stir in the panko and almonds (optional) and sprinkle over the creamed spinach. Bake for 15 minutes until golden. Serve.
original recipe called for almond milk specifically, and 4-5oz bags of spinach to serve 6
