LOVE this! So hearty. Will try again with wild rice in place of quinoa.
1. Preheat oven to 400* and generously grease a 9x9 baking dish.
2. Mix spices (cumin - rosemary) with salt and pepper.
3. Bring chicken broth and half the milk to a low boil in a saucepan. Whisk the other half of the milk with the mixed spices and flour. Add the mixture to the boiling liquid and whisk until a smooth, creamy sauce forms. Remove from heat.
4. Add quinoa, water, chicken and bacon and stir to combine. Pour the mixture into prepared baking dish. Sprinkle with extra spices if desired. Cover with foil and bake for 30 minutes.
5. Place broccoli in boiling water until it turns bright green (about 1 minute) then run under cold water. Set aside.
6. Check casserole at 30 minute mark. If the chicken is done, add the broccoli (and extra water, if necessary) and stir. Top with cheese and broil until cheese begins to get brown and bubbly.
