20 minutes ahead of time, chill small mixing bowl in freezer for whip cream topping.
Beat cream cheese until smooth and creamy. Add sugar and continue to beat. Add peanut butter and beat until well blended.
For Whip Cream Topping:
Add whipping cream to chilled bowl with 2 T sugar and 1/2 t vanilla. Beat with mixer on high on high until peaks form, about 3-5 minutes.
Lightly fold topping into peanut butter blend until blended well being careful to mix gently.
Optional: Top with melted chocolate if desired
Fill pie shell and refrigerate for 4 hours.
*If you do not have a double broiler, cradle a glass bowl inside a pan with water and heat until steam warms the glass bowl and melts the chocolate.
Make sure cream cheese is at room temperature. Chill metal mixing bowl for whipping cream.
