Great casserole with ham and cauliflower.
Cut cauliflower inti florets (about 3 cups). Microwave until tender in a little water, drain and set aside.
Melt 4 tablespoons butter in medium sauce pan over medium high heat. Whisk in flour until smooth. Gradually add milk, whisking constantly, until mixture begins to thicken. Add cheese and sour cream, stirring until cheese melts. (Do not boil)
Stir cauliflower , ham, into cheese sauce; pour into 2 quart baking dish. Sprinkle breadcrumbs evenly over casserole. Melt butter and drizzle over the top.
Bake uncovered at 350 for 45 minutes.
Make sure the cauliflower is drained completely. I sometimes use half and half in place of milk if have on hand.
