Suggest a better descriptionPat chicken breasts dry. Season chicken breasts generously with salt, pepper, paprika, and thyme on a cutting board. Ensure each piece is well-coated.
Boil gnocchi in salt water per package instructions. Drain and set aside. Be careful gnocchi does not stick to the colander over time.
Head olive oil in a pan at medium heat.
Add chicken to the pan and sear until they are golden brown and cooked through (5-6 minutes per side, depending on thickness). Once done, transfer chicken to a plate and let it rest.
Now, add a splash of water to the same pan to deglaze it. Then, add minced garlic and sliced zucchini and season with salt, pepper, and paprika. Cook until zucchini is tender and garlic is fragrant.
Pour in heavy cream and sprinkle parmesan cheese. Stir until the cheese melts into the cream to form a thick sauce. Add Trader Joe’s Pesto Rosso to the sauce and mix.
Now, add your gnocchi, mix. Then add chicken back into the pan and finish with a sprinkle of parmesan. Enjoy!
