Make ahead meal (lesson 2)
Brown meat and drain. Sprinkle in salt and chili powder. Stir in salsa, sour cream, and 1 cup of cheese. Lay 3 tortillas in the bottom of a 9x13 baking dish. Spread half of meat mixture over tortillas. Layer again with the 3 remaining tortillas. Spread remaining meat mixture over tortillas. Top with remaining cheese. Bake uncovered at 350 degrees for 20-25 minutes. Makes 6-8 servings.
To freeze for later: Assemble it as described, but don't bake it. Cover it well, and put it into the freezer. when you plan to serve it, thaw it in the refrigerator and bake as directed. OR easier yet: Place frozen casserole into a cold oven. Turn the oven on to 250 degrees and bake for two hours or until cooked through and bubbly.
