This sauce is simple, light, but packed full of flavor. It's used over any type of noodles and would pair well for chicken parm.
In a medium sized sauce pan, heat up oil on medium heat.
Add tomatoes, onions, and seasoning to pan.
Once tomatoes are soft, use a potato masher, or a whisk to start smashing the tomatoes until it forms a sauce like texture.
Turn down to low/medium heat and let the sauce simmer until most of the moisture has evaporated. Be sure to stir often and not scorch the bottom.
Once the sauce thickens up, add chicken stock and vinegar and allow the sauce to cook down again.
Once it thickens up a bit, add heavy cream and simmer for a few more minutes.
