Suggest a better description1 Blanch the chestnuts in boiling water for 5min, drain and peel. Bring a pan of lightly salted water to boil and chestnuts and simmer for 30min.
2 Meanwhile, put vanilla sugar, sugar and 250ml water to cook over medium heat, stirring until the sugar has dissolved, then simmer for further 10min.
3 Drain the chestnuts and add syrup to the chestnuts. Boil for 10min. Remove chestnuts and blitz in a blender. Stir chestnuts into a syrup and leave to cool.
4 Whip the cream until stiff and fold into the cooled chestnuts. Keep cool until serving.
