Delicious, light and simple dessert
Place 1 cup sugar in a small saucepan over med/high heat. Melt until a golden liquid. Swirl pan to help dissolve. Don''t burn. Pour into a 9" pan (I use a white pyrex, high sided dish), tipping to coat sides and bottom. Allow to solidify.
Preheat oven to 325 degrees F.
Beat 3/4 cup sugar with eggs and vanilla in a medium sized bowl.
Boil milk, remove from heat.
Slowly pour hot milk into egg/sugar mixture, stirring constantly.
Pour into prepared pan.
Place prepared pan into a larger container with hot water 1/2 way up the sides (waterbath)
Bake 60 minutes or until STARTING to firm in middle.
Carefully remove from waterbath.
Cool and refridgerate until cold and totally set.
Invert onto a serving dish with low sides, allowing all the delicious liquid caramel to drizzle over the dessert.
