Suggest a better descriptionCombine sugar and water in a pan and cook on stove to make a golden caramel, pour into moulds and allow to cool.
Combine the cream, milk, grated tonka beans and vanilla in a saucepan over a medium heat and cook until it starts to simmer, remove from heat and allow the flavor to infuse. Combine the eggs and remaining sugar in a bowl and whiskl until pale and creamy. Slowly add the cream mix stirring constantly. Strain the mixture if necessary and pour over the caramel, bake in combi oven at 95 degrees until cooked.
