Creole Fish Orleans

In a large skillet melt butter, sauté onion, celery, and garlic ~3 min. Stir in tomatoes, bay leaf, Worcester, salt and tobasco. Simmer 15 minutes until slightly thick. Add mushrooms. Roll fillets, arrange in sauce, cover and cook _10 minutes until fish is done. Place fish on serving platter, spoon sauce around fish and garnish with parsley.
Consider serving over rice pilaf: 1/2 c butter and scallions, brown 2 cups rice. Add 4 cups chicken broth. Season with dried rosemary. Boil, place in 350 degree oven uncovered ~1/2 hour... stir and check doneness... can add mushrooms 1/2 way through cooking. Once done cover.
