Dinner & Cinnamon rolls
Scald milk in pan, then cool to room temperature
Activate yeast in 1 cup of warm water, adding 1 Tbs sugar
Mix eggs, shortening, & sugar in large mixing bowl - add in milk and activated yeast
In a separate bowl, mix 1 cup flour with salt then add to egg/milk mixture
Add 3 more cups flour, using hand mixer
Add the rest of the flour 1/2 cup at a time kneading by hand until dough is somewhat sticky
Cover with buttered wrap and let rise 3-4 hours until doubled
Roll out into dinner rolls or cinnamon rolls.
Let rise and double again for 1 hour
Bake at 325 for 8-10 minutes on cookie sheets sprayed with Pam
Dinner rolls:
Split dough into half
Roll out in 1 1/2' circle
Spread melted butter all over top
Cut into 12-14 pizza slices
Roll in to crescent shape
Place tip down
Cinnamon rolls:
Split dough into 3 pieces
Roll out into rectangle 6" x 12"
Spread melted butter all over
Sprinkle brown sugar and cinnamon
Roll lengthwise and then roll into circular spiral
Cut every 2" along side 1/2 way through
Frosting for cinnamon rolls:
Mix 1 Tbs powdered sugar into 1/2 lb melted butter
Add in milk
If there is any melted butter floating on top of the mixture, add a little more powdered sugar until absorbed
Spread when rolls have cooled down
