Chocolate chip with rice krispies!! Winning recipe from Kakaako Kitchen contest.
Cream butter, margarine and sugar with mixer until light and fluffy - about 5 minutes. Add vanilla and mix only to incorporate vanilla into batter.
In a separate bowl, sift dry ingredients - flour and baking soda. Be sure to sift the baking soda. Mix gradually into butter mixture. Does not need to mix completely because there's more mixing to come (see below). DO NOT OVERMIX.
Stir in rice krispies, chocolate chips and nuts with spatula or wooden spoon. Make sure you scrape the bottom of the bowl.
Refrigerate dough for at least 3-4 hours. Overnight is okay too. BE SURE TO COVER THE DOUGH.
Prepare cookie sheets with parchment paper. When ready to bake, preheat over to 275 degrees. Scoop dough onto cookie sheet with lots of space between dough (at least 1-1.5"). Bake 40-45 minutes. Do not allow cookie to get really dark. Cool cookies for a minute or two on the cookie sheet before transferring to cooling rack. Cool completely before storing.
