I tend to do it with mayo. I do the crockpot on low, and check the chicken after two-ish hours with the thermometer to make sure the chicken doesn’t get overcooked. Once it hits 165, I set it to warm. I cut up celery, red pepper and white onion, and throw them in there after maybe 1-1.5 hours bc I don’t want them to get mushy.
