This is good
Cook noodles until barely tender (about 2 minutes). Drain well and place in large bowl. Add butter, ham, cheese, milk and nutmeg. Gently lift and mix together with a large fork and spoon until ham and cheese are distributed throughout. Cool (this can be done up to 1 hr ahead).
Gently stir in egg yolks. Beat egg whites til stiff, moist peaks form. Fold egg whites into noodle mixture, a portion at a time, just until blended. Transfer to buttered 3 qt souffle dish or deep casserole. Bake, uncovered, in a 350 F oven for 40 minutes. Increase oven temperature to 450 F and bake til top is brown, about 10 minutes. Serves 12
