Saute onion, garlic, ginger in oil for 5 minutes
Add curry powder and milk, mixing well. Simmer for 5 minutes.
Grind cashews in blender. Add to pan along with veggies.
Cover and simmer until veggies are tender (7 to 10 min)
Serve over rice with additional cashews.
