Vegan burgers made from chickpeas, oats, and carrots with a touch of curry. Serve on buns with hummus and veggies.
Preheat oven to 375?. Grease a baking sheet or line with parchment paper and set aside.
In a food processor, process the oats, carrots and all the spices/seasoning for 30 seconds or until somewhat smooth.
Add the chickpeas in 1/2 cup increments and coconut oil, stopping to scrape the bowl as necessary. Once chickpeas are smooth, place the mixture in a medium bowl.
Stir in the sunflower seeds and pepita seeds. Wet hands and shape patties. Makes about 6 patties. Bake for 20 minutes and then grill till done. Serve on buns with hummus and veggies.
