A little curry powder goes a long way. Use Jemima's personal blend instead of store bought.
Remove cardamom seeds from their pods if necessary. In a spice grinder or with a mortar and pestle, combine all ingredients; grind until mixture becomes a powder.
Store in an airtight container for up to 1 year.
Appears to be milder than the store bought I am used to, but then I guessed at the the amount of powdered cardamom would equal 3 seeds. Great aroma and nicer flavour when made fresh.
