Heat oven to 300°F and line rimmed baking sheet with parchment paper. In a large bowl, whisk together syrup oil, and spices. Add peanuts and toss to combine. Arrange in a single layer on prepared sheet and bake, stirring halfway through, until crisp 14 to 16 minutes. Toss with lime zest and additional 1/2 teaspoon curry powder. Let cool, then toss with mango that is diced or torn into small pieces.
