Suggest a better description1. In large pot, heat oil over medium heat and add onions. Cook 15 min. Stirring occasionally
2. Add garlic and ginger, cook stirring for 2 minutes
3. Add curry powder and cook for 30 seconds
4. Add tomatoes (with juice), stir, then add vegetable stock. Raise to high heat. Once boiling, reduce and simmer for 30 min
5. Stir in garam masala and remove from heat
6. Purée in a blender and season
Makes 5 cups
