For making fried fritters/beignets that are fruit filled. Contains both milk and beer giving it a light yeasty flavor with a good coating. Good for all fruits.
In a large bowl whisk together flour, sugar, baking powder and salt. In a large measuring cup whisk together egg, melted butter, milk and 1/4 cup of the beer. Pour into dry ingredients and whisk until smooth. Slowly beat in remaining 1/4 cup of beer, as needed, to make a batter with the consistency of a thick, heavy syrup (thick enough to stick to the fruit) . Let batter stand at room temperature, covered, for at least an hour before using.
To use: Fill a deep fryer or large heavy pot with 2 to 3 inches of peanut or canola oil and heat to 360 degrees. In batches, dip fruit into batter to coat both sides, and fry, turning once to cook evenly, until fritters are golden and crisp, about 3 minutes. Remove from oil and drain on paper towels. While still warm, dust with ground cinnamon and powdered sugar, if desired. Serve while still warm.
Although it can be used right away, the batter improves if left at room temperature for about an hour. The batter ferments a bit, which brings out the yeasty taste and makes the fritter puff more when fried.
Many people deep fry at too-high temperatures that leads to an overly browned crust and semi-cooked interior. Fry at 360 degrees - as you add fritters, the temperature of the oil will drop a bit and you will be frying at an ideal temperature of 350 degrees.
