leeks cheese and sausage tart
Pre cook sausages for 2 to 3 minutes to brown all over.
Put to one side
Add oil to large saute type pan
Finely slice leeks into rings and add to pan along with garlic and red peppers
After 5 mins add salt and butter and then cook untill soft.
In the meantime
Put both sheets puff pastry together and roll out untill they fit into and up the sides of an 18cm x 28cm x 3cm non-stick baking tray
fold over the edges of the pastry to give a thick top edge
Evenly sprinkle in the crumbled up goat cheese into the base of the tart.
Spoon in in the cooked leek, pepper, garlic mix
sit the sausages on top of the mix, 2 rows of 4
sprinkle over the grated cheddar cheese to lightly cover the sausages
Place on middle oven rack, gas mark 6, 200 Deg C and cook for 20 mins or untill pastry is golden
good on its own or with "daves cheese sauce" or cold the next day
