Mini meatloaves topped with American, Italian, or Mexican sauce. Make a batch and freeze them for single meals.
Heat oven to 375 degrees. Mix meat, stuffing mix, water, and add-ins for the American, Italian, or Mexican sauce. Press into 12 muffin cups or 6 mini loaf pans sprayed with cooking spray or lined with foil. Make an indention in center of each with spoon; fill with sauce.
Bake 30 minutes or until cooked through. Top with cheese; continue baking 5 minutes or until cheese is melted.
I bake them in foil-lined mini-loaf pans, bake, then pop them in sandwich bags to freeze.
