This is a great recipe for picky eaters. It's rich and meaty and it also contains a lot of vegetables. If you don't want to shred the vegetables into the sauce, or you like chunks of vegetables, dice all vegetables and add to sauce. Feel free to use any vegetables in the fridge. Goes great with garlic bread or biscuits.
Fill a dutch oven or other large pot 3/4 full of water, add a pinch of salt. Set on high heat to boil. When at a rolling boil, add lasagne noodles, reduce heat to medium high. Cook until limp but firm to the bite - about 8 - 10 minutes.
Meanwhile, heat a large frying pan or saucepan on medium high heat. Add ground beef and cook, breaking up chunks with a wooden spoon, until no longer pink. Add onions and garlic and saute until onion is soft. Add remaining vegetables and cook until peppers begin to soften, about 3 minutes. Drain off any liquid in the pan. Add tomato sauce and reduce heat to low. Cover and simmer until ready to assemble lasagne.
In a blender or food processor, add cottage cheese, eggs, spinach and about half of the parmesan cheese. Whirl just enough to combine and set aside.
When noodles are done, drain and add cool water to keep them from sticking. You are now ready to assemble the lasagne.
In a 9 X 11 baking pan, spread 1/2 of the meat sauce. Layer noodles loosely over the meat sauce. Be sure to give them a little shake as you pull them from the water so the lasagne doesn't get soggy. You may need to trim a few noodles to fit the pan and ensure all of the sauce is covered. Pour cottage cheese mixture on top of the noodles and spread evenly with a spoon or spatula. Add another layer of noodles. Spread remaining meat sauce over the noodle layer. Spread shredded mozzarella over meat sauce. Sprinkle with remaining parmesan cheese.
Cover with foil. Bake in 350 oven for 45 minutes. Remove foil and turn oven to broil to brown cheese. Bake another 10 - 15 minutes until cheese is desired darkness. Remove from oven, let stand 5 - 10 minutes before serving.
