Surprisingly tasty with nice dill taste. The feta is not really noticeable but adds depth.
Bring potatoes and water to cover to a boil. Cook 20-25 minutes or until just tender. Drain and cool. Cut potatoes into quarters.
Whisk together vinegar, oil, dill, salt and pepper. Pour over WARM potatoes.
Stir in chopped bell pepper. Add feta and toss.
Cover and chilll at least 2 hours.
