A healthier version of savoury crepes.
This is a great recipe to use when preparing a crepe that is to be filled with non-sweet foods such as salmon and cream cheese or turkey and pepper. Canned tuna is also a great option to fill it with along with a small amount of low fat mayo.
These crepes can be served as a lunch or dinner with savory fillings (such as cheese and vegetables) or for dessert. They keep well in the fridge for a few days.
Put the flours and salt in a large mixing bowl and dig a little well in the center. Break the egg in the well, and incorporate it into the flour with a whisk or egg beater. Pour the milk in slowly while beating the mixture. Next, add the water and beat until smooth..
Cover the mixing bowl with plastic wrap, and store in the fridge for at least two hours, overnight is best
To prepare crepes:
Remove the batter from the refrigerator and whisk the batter again, as some of the flour will have settled at the bottom of the bowl.
Preheat the oven to 150°C. Heat up a large non-stick skillet over high heat. When it is very hot, put in a sliver of butter. When it is melted, but before it browns, use a heat proof pastry brush to spread the butter evenly on the surface of the skillet. Pour a ladleful of dough in the skillet, and move the skillet in a circular motion so that the batter spreads to fill the pan. Cook on medium-high heat for 2-3 minutes, peeking underneath with a spatula from time to time to check on the cooking. When crepe is browned underneath, flip crepe with a rubber spatula and continue cooking another minute or two. Place on a dish in a warmed oven while you cook the remaining crepes.
