Beats the pants off canned soup green bean casserole.
Prepare fried shallots:
1. Slice and separate shallots.
2. Add 1”+ of canola oil to large pot, heat over med-high to 350F.
3. Combine 200g flour, 75g corn starch, 3g salt, 3g baking powder, 2g pepper, and 2g paprika. Add shallots to and toss to coat. Sift shallots out of flour and place in a bowl.
4. Add 225g buttermilk to shallots and stir to combine, then add shallots back into flour mixture and toss to coat.
5. Place shallots into 350F oil. After 5 mins or when shallots are golden & crispy, transfer to towel to drain.
Prepare casserole:
1. Prep green beans, mushrooms, and thyme.
2. Bring large sauce pot filled with water to a boil over high. Salt the boiling water & add beans. Boil for 5 min or until tender. Drain and transfer drained beans into a large bowl.
3. Make duxelles. Preheat medium pot over medium heat and add 115g butter. Add diced mushrooms, 20g garlic, and 10g salt and stir. Cook for 5-6 minutes or until mushrooms take on color and moisture has all cooked off. Stir in 5g thyme for about a minute. Stir in 65g flour. Cook for a minute, scraping any mushroom fond from bottom of pan. Add 400g chicken stock and 125g heavy cream, stir to combine, and bring to a simmer. Cook for another 2-3 minutes to cook roux and mushrooms, adding more stock to thin if needed.
4. Turn off heat and gently stir in cooked green beans, 50g parmesan, and 3g pepper. Further thin with stock if needed.
5. Spread into 9”x13” pan, top with shallots. bake at 375F, 18-20min.
