Only 6 ingredients, and great for family or company! Inspired by a recipe from All You Magazine.
Preheat oven to 425F. Peel apples and chop into 1/2-inch cubes. In a large bowl, combine 1/3 cup of the brown sugar, 1 1/2 tablespoons of the butter (cut into small pieces), and the cinnamon and salt. Add apples and toss to combine. Divide mixture into 6 small ramekins.
Crush the oatmeal cookies (you can use a food processor or place them in a ziplock bag and crush them with a rolling pin). In a medium-sized bowl, combine the cookie crumbs, the remaining tablespoon of butter (cut into small pieces), and the remaining 2 tablespoons of brown sugar. Sprinkle over apple mixture in the ramekins.
Bake for 10 minutes, then remove from oven and stir to mix well. Return to oven and bake another 5 minutes until bubbly. Serve warm (Careful--ramekins are hot!) or let cool and serve with whipped cream.
