In this unique technique, ribs are grilled standing on end over direct heat, allowing them to self-baste as they cook. Unlike other preparations, they require no precooking.
Try Smoky seasoning rub and Kickback bbq sauce recipe in this box.
1. Heat grill. Rub both sides of ribs with seasoning rub. Arrange each rack in a circle (like a crown roast); secure with turkey lacing pins.
2. Grill ribs, covered, standing upright on tips of bones over low heat or coals 30 minutes. Turn; grill an additional 20 to 30 minutes or until meat between rib bones is fork-tender. Meanwhile, place 1 cup of the barbecue sauce in small bowl; reserve remaining sauce.
3. Remove lacing pins; lay ribs flat. Brush with 1/2 cup of the barbecue sauce. Grill 15 minutes, turning once and brushing with remaining 1/2 cup barbecue sauce. Serve ribs with reserved sauce.
