Great for ice cream cookies.

1. Preheat oven to 325 degrees.
2. Line 2 lg baking sheets with parchment paper.
3. Place flour, soda, ginger and cloves in a bowl and whisk to combine.
4. place butter and sugar in a mixer bowl and beat until combined and light.
5. Beat in the egg, vinegar and molasses.
6. Beat in the flour mixture until just combined.
7. Gather the dough and knead and press into a large ball.
8. Roll the dough into 1 inch balls and place on the baking sheeets, spacing them about 2-3 inches apart.
9. Bake the cookies, one sheet at a time for about 15 minutes each.
10. Cool to room temperature on a baking rack.
Original amount of sugar is sweet. I prefer a little less sweetness which allows the ice cream flavour to exert itself, thus the 3/4 cup of sugar recommendation.
