Scandinavian (Danish) filled pancakes/doughnuts made stove top in a special pan.
Mix dry ingredients together in a bowl. (sugar, salt, cardamon, baking powder, flour) Add lemon zest to dry ingredients and whisk until blended. In a separate bowl, beat the egg yolks and then add milk, vanilla, almond extract and whisk together. Combine egg yolk mixture with the dry ingredients and stir until blended.
Beat egg whites until stiff, then, fold into batter.
Pour batter into heated and buttered ebelskiver pan. Fill each cup half way with the batter. Then, take one teaspoon of desired filled and drop in it the center of each cup of batter.
When the.edges start to bubble and when like pancakes, bubbles pop in the top of the batter, turn each ebelskiver using 2 skewers. Remove from pan when they are golden brown on the bottom.
Dust with powdered sugar and eat warm. Delicious!
