Edamame Pasta w/Pesto
Cook the Edamame pasta per the instructions on the box and reserve the liquid after draining. While the pasta is cooking, saute the mushrooms until caramelized then add the cherry tomatoes and chicken. Cook for 1-2 minutes then add the pesto sauce. Simmer for 1 minute. Add the cooked pasta and toss. Add pasta water if needed to create a creamy sauce.
