These taste great warm or cold! I often grab a cold one from the fridge on my way out the door in the morning.
1. Spray cupcake pan with non-stick spray.
2. Line each cup with a slice of turkey.
3. Crack an egg in each cup.
4. Sprinkle onion in each cup.
5. Use fork to gently swirl to mix lightly.
6. Sprinkle top with cheese.
7. Bake 375 for 20-30 minutes
I like to bake until corners if cheese starts to brown slightly.
