From Mea Cliff's grandmother's recipe files
Beat eggs well, add sugar and beat again. Add rum-based homemade vanilla extract (or 1 teaspoon vanilla extract and 1 tablespoon rum), and eggnog, beat again.
Pour into unbaked pie shell, dust top with nutmeg. Bake 350 F until eggs rise up and slightly brown (about 30-40 minutes).
Serve chilled.
NOTES:
This makes a short pie. To fill a larger shell, add another Egg, 1/4 cup Sugar and 1/4 cup Eggnog, and splash more Rum.
If you don't have homemade, rum-based vanilla, you can substitute 1 teaspoon Vanilla extract and 1 tablespoon Rum
*If your eggnog already has rum in it, you don't need to add more.* RIIIiiight....
