Suggest a better descriptionHeat oil in frying pan, add half eggplant to pan, cook for 5 minutes or until eggplant is soft.
Remove from pan with slotted spoon, repeat with remaining eggplant.
Heat extra oil in frying pan, add garlic, tomatoes, tomato paste and water.
Cook uncovered for 10 minutes or until sauce is thick.
Add eggplant, salt and pepper to sauce, stir lightly to combine.
Serve hot or cold.
