Suggest a better descriptionSprinkle yeast over water (105°-115°) in large bowl; stir until dissolved. Stir in salt and sugar until dissolved. Add eggs, sweet potato, 1/2 cup softened butter, and 3 cups flour. Beat until smooth with mixer at medium speed, about 2 minutes. Gradually add 3 cups additional flour, mixing with hands until smooth and stiff. Add another half cup if needed. Let rise in greased bowl. Grease two 13x9: pans. Roll out each half of dough into a 21" strip; cut into 21 pieces and arrange each into a smooth-topped ball. Arrange in pan and let rise again. Brush tops with butter. Bake until golden brown and brush tops with melted butter again. Serve hot or remove to wire rack to cool.
