Beat at hi speed for 12 to 15 minutes so stiff peaks form. Gently fold in pecans.
Drop spoonfuls onto parchment paper. Put cookie sheet into oven and turn off oven.
Open oven in am. Cookies will be cracked and hollow. Store in airtight container.
